- Add eggs to a small bowl and whisk vigorously. Heat a small skillet over medium-high heat and add butter, swirling to coat the pan. Add the eggs to the pan and stir with a spatula for 15-30 seconds until beginning to cook and fluff. Add oats and water and continue to cook, stirring continuously for 2-3 minutes. Add cheese and sun-dried tomatoes and cook another minute. Remove from heat and sprinkle with fresh herbs, chilli flakes, and salt and pepper to taste. Serve hot.
