Instructions

  • For preparing the dough, take a bowl and add all-purpose flour, salt, 1 tablespoon of refined oil and water. Knead this into a stiff dough. Set it aside for a while. Meanwhile, on a chopping board, chop the onions and green chillies finely. Add these to a bowl. Mash the boiled potato and place it in a separate bowl. Saute The Spices Now, place a pan over medium flame and add 1 tablespoon of refined oil. When the oil is hot enough, add garlic paste, ginger paste, asafoetida, cumin seeds, sugar and mustard seeds. Saute well and let the mixture turn cook. Next, add in the coriander seeds, chopped onions, chopped green chillies and salt as per your taste. Mix well all the ingredients. Prepare The Filling When onions turn slightly brown, add red chilli powder, mashed potatoes, dried mango powder, gram flour, sugar and garam masala powder to this mixture. Mix well to ensure that all the ingredients are evenly coated. Once the oil separates in the pan, take it off the flame and let it cool. Prepare Stuffed Balls To Prepare The Kachoris: Now extract a small portion of the dough and make small dough balls. Then use a rolling pin to flatten the balls, then add the stuffing and seal the corners. Deep Fry The Kachoris: Now, place a deep-bottomed pan over medium flame and heat refined oil in it. Once the oil is hot enough, add the raw kachoris and fry them until they turn golden brown in colour. Once the kachoris are done, place them on a plate lined with absorbent paper. Serve hot.
