Palak paneer kofta curry (Spinach koftas)

  • Spinach
  • Paneer
  • Cornflour
  • Raisins
  • Salt
  • Cashew nuts
  • Onion
  • Garlic
  • Ginger
  • Kasuri Methi
  • Cumin powder
  • Coriander powder
  • Black pepper
  • Cardamom powder
  • Fresh Cream
  • Oil
  • Water

Instructions

  • Wash the Spinach and blanch a little, and then chop it.
  • Crumble the paneer, mix it with salt, raisins and ¼ tbsp pepper.
  • Make sure to dry the spinach by straining it completely.
  • Mix a little cornflour to both of the mixtures and make two separate doughs.
  • Make balls out of the doughs.
  • Take one spinach ball and flatten it. Place a paneer dough inside it and make one ball. Repeat this process for all.
  • Roll the koftas in cornflour.
  • Fry the kofta balls and cut it in the middle.
  • To make the gravy, heat 2 tbsp oil in a pan and add onion,garlic and ginger to it.
  • After it becomes succulent, add cumin powder and coriander powder. Mix well and saute until oil separates.
  • Then add cashews paste and ½ cup water .Mix it well and cover with lid for few minutes until you get the right consistency of the gravy.
  • Add crushed kasuri methi and cardamom powder.
  • Garnish it with fresh cream and serve it with the koftas.

Notes/Tips

• Koftas can be made with mixing palak and paneer together also, instead of stuffing them. • Add the koftas just before serving them.
