Ingredients

  • Satay sauce: 1 tbsp smooth peanut butter
  • 1 tbsp soy sauce
  • Coconut milk 10 ml
  • 1 tbsp honey
  • 1/2 lime
  • For salad: 250 gm cottage cheese (paneer)
  • 2 tbsp red cabbage shredded
  • 2 tbsp zucchini (diced)
  • 1 tbsp button mushrooms (diced)
  • 1 tbsp red, yellow and green bell peppers
  • 0.5 tbsp purple onion (diced)
  • 6-7 leaves Thai Basil
  • Sesame seeds for garnish
  • Coriander for garnish
  • Crushed Roasted salted peanuts for garnish
  • Long sprouts of mung beans

Instructions

  • 1. Grill paneer cubes, zucchini and mushrooms on grilling pan with a little oil. Make sure they are nicely cooked. ( you can use paneer tikka also)
  • 2. Mix all the ingredients in a bowl and add satay sauce as per the requirement.
  • 3. Add salt and pepper and mix everything nicely.
  • 4. Lastly garnish the dish with sprouts, coriander, peanuts and sesame seeds.
  • 5. Serve with a slice of lemon.
