Paneer kheer or Payasam is an easy and quick creamy dessert recipe. This kheer requires only 3 main ingredients and tastes heavenly.

Ingredients

  • Paneer crumbled : 1/2 cup
  • Full cream milk : 3 cups
  • Sugar : 1/4 cup
  • Saffron strands : 7-8
  • Dry fruits : 2 tbsp (almonds, pistachios)
  • Cardamom powder : 1/2 tsp

Instructions

  • Soak 7-8 strands of Saffron in 1 tbsp hot milk and keep aside.
  • Heat ghee and fry Dryfruits for a minute and keep aside.
  • Heat milk in a wok and bring it to boil.
  • Add in the saffron milk mixture and let the milk simmer on medium flame for 4-5 minutes till it thickens a bit. Now add cardamom powder and give it a stir.
  • Add sugar and mix nicely.
  • Add crumbled paneer and mix nicely. I have used homemade paneer.
  • Cook for few minutes till paneer is cooked nicely.
  • Add fried dry fruits and mix nicely.
  • Paneer kheer is ready, garnish with dryfruits and serve hot or chilled.

Notes/Tips

If using store bought paneer, just moist it by dipping in warm water for some time and grate it as fine as possible. You can add rose essence in the kheer if you like. You can increase the sugar if you like more sweet.
