Papad Thoran is inspired from the Kerala cuisine. It is a very simple and a quick side that can be made in a jiffy. It pairs well with rasam rice, Sambar, dal or mor curry.

Ingredients

  • 10 Urad Papad - fried
  • 1 big onion
  • 2 green chillies
  • 1/2 cup freshly grated coconut
  • 1/2 Tsp split urad dal
  • 1/2 tsp mustard seeds
  • Hing for tadka
  • 2 Tbsp oil
  • Curry leaves
  • Salt to taste
  • 1/2 Tbsp Red Chilli powder
  • 1/2 tsp turmeric powder
  • 2 dry red chillies

Instructions

  • 1. Heat a Kadhai - add 2 Tbsp of any neutral flavoured oil/ coconut oil. 2. Once the oil is hot - add the tempering ingredients- mustard + urad dal + hing + green chillies chopped + curry leaves. Roads everything well for a minute until golden. 3. Now add the finely chopped onions and sauté for 2- 3 minutes, add in the grated coconut + salt + turmeric + red chilli powder. 4. Mix everything well and keep it aside. Right before you are about to serve lunch, crush the papad and toss it in the above mixture. 5. Yummy papad Thoran is ready!

Notes/Tips

* you can fry and crush the papad before you are serving lunch to retain the crunch. * Go a little easy on salt as papad already has some. Always better to check n add as per your taste.
