- Heat ghee in a heavy bottom pan add papaya in it. Sauté on high heat for 5 minutes stirring continuously. Add cardamom powder, almond powder, mix well and let it cook on medium flame.
- Stir occasionally to avoid burning, Add khoya in it. Let it simmer for 4-5 minutes till khoya is well combined.
- Add sugar, mix and saute on high heat stirring continuously till mixture become very thick. Take it off the stove, immediately pour it on a greased tray or plate.
- Refrigerate till it sets (approximately 1.5 hours). Cut in shape of your choice.
- Papaya barfi is ready to serve.
