Papaya Carrot Almond Kheer

Ingredients

  • 1/2 cup almonds
  • 1 cup carrots, grated
  • 2 cup papaya (ripe fruit) finely chopped
  • 1/4 cup melted butter
  • 6 cup low fat (1% fat) milk
  • 1/2 tsp saffron
  • 1/4 cup sugar optional)
  • 1/2 tsp cardamom powder
  • 1/2 tsp nutmeg, gated
  • 1/2 tsp licorice powder
  • 1/2 tsp cinnamon powder
  • As needed Honey

Instructions

  • Soak almonds in 2c boiling water for 20-30 min. Peel, soak in a cup of water. Blend it in a blender to make a coarse paste. soak saafron in a small bowl with 2tbs hot water; it woukd then dissolve to give a nice color
  • Over medium heat, melt butter in a saucepan. Stir in grated carrots and papaya; cook with stirring until the raw smell goes away, 10 min. Turn off the heat. Over medium heat take the almond paste with 2c water in a saucepan; Cook stirring now and then, let it boil. Reduce the heat; continue cooking until the raw smell goes away. Now add the cooked carrot papaya mix, add hot milk, and bring it to boil. Be careful, do not let milk boil over and make a mess.
  • If you want you may add sugar now. I do not add sugar, white sugar is not good for good health. Stir in saffron, cardamom powder. Keeping a small grater over the saucepan, grate licorice and nutmeg, nothing like freshly grated nutmeg to add aroma. After a couple of minutes turn off the stove. Kheer is ready to taste. If you need more sweetness add honey as needed.
