Papaya Sweet Pachadi

Ingredients

  • 2 c papaya (diced)
  • 1 tbsp melted butter
  • 4 cloves
  • 4 cardamom
  • 1 green chili chopped
  • 1 tspginger, grated
  • 1/4 tsp turmeric powder
  • 1/2 tsp cinnamon powder
  • 1/2 tsp saffron
  • 2 tbsp brown sugar
  • 10 curry leaves
  • 1 pinch salt

Instructions

  • Remove the outer rind, and seeds. Dice the pulp into small pieces. Dissolve saffron in 1tbsp hot water, It would give a nice color
  • Over medium heat melt butter in a saucepan. Stir in cloves, cardamom, green chili, and ginger; 1 minute. Add curry leaves, turmeric powder.
  • Stir in papaya pieces, contimue cooking over medium heat until the raw smell goes away, about 4-5 minutes. Add 2c of water, bring it to boil. Stir in brown sugar. You may adjust the sweetness according to your taste.
  • Reduce the heat, let it boil. Stir in cinnamon, saffron. Add coconut milk. Mix thoroughly with a ladle. Salt to taste. Turn off the heat. You may serve it at room temperature or chill to serve.
  • Transfer to a serving bowl. Tastes great with curd rice. You may taste the pachadi as it is. Enjoy the delicious nutritious sweet pachadi
