- Remove the outer rind, and seeds. Dice the pulp into small pieces. Dissolve saffron in 1tbsp hot water, It would give a nice color
- Over medium heat melt butter in a saucepan. Stir in cloves, cardamom, green chili, and ginger; 1 minute. Add curry leaves, turmeric powder.
- Stir in papaya pieces, contimue cooking over medium heat until the raw smell goes away, about 4-5 minutes. Add 2c of water, bring it to boil. Stir in brown sugar. You may adjust the sweetness according to your taste.
- Reduce the heat, let it boil. Stir in cinnamon, saffron. Add coconut milk. Mix thoroughly with a ladle. Salt to taste. Turn off the heat. You may serve it at room temperature or chill to serve.
