- Take the refined flour in a bowl, add Ajwain, salt, and veg refined oil. Now mix them properly with your hands To get a crumbly texture.
- Now add water little by little and make a tight dough. Now cover the dough with a muslin cloth and keep it at rest for 30 minutes.
- For stuffing , mash the boiled potatoes. Heat 1 tbs oil in a pan, add cumin seeds, crushed coriander seeds,grated ginger, chopped green chillies And Aamchur powder. Saute them for 30 seconds
- Now the mashed potatoes and nicely mix the ingredients together with the help of a spatula and saute them for 5-6 minutes until you get a nice masala potato mash.
- Now, take the dough and divide it into 3 equal portions. Take one portion and roll it out into a thin sheet . Trim off the edges to get a square shaped sheet . Now spread 1/3rd of the potato mash over the sheet evenly.
- And start rolling the sheet from one end to get a cylindrical shape. Now, cut the cylinder with one inch gap to get small Pinwheels shaped samosas.
- Now, make a slurry of tbs refined and 1/2 cup water. Dip the Pinwheels one by one in the slurry and then deep fry them at medium t low flame for about 4-5 minutes.
