Pistachio cardamom biscuits

Ingredients

  • Plain flour
  • Oats
  • Baking powder
  • Flaxseed
  • Water
  • Vegetable oil
  • Honey/maple syrup
  • Almond milk
  • Pistachio nuts
  • Dark chocolate chips

Instructions

  • Pre heat oven 150 degrees Celsius, gas mark 2.
  • In a large bowl add the flour, cardamom, oats and baking powder and mix.
  • Add the water to the flaxseed and mix. Add the oil, milk and syrup to the flaxseed and mix well, add this to the dry mixture and mix until dough Forms.
  • Add the pistachio and chocolate chips and gently combine.
  • Make small rounds with the biscuit dough, flatten, place on a greased tray and bake the biscuits in the oven for about 20 minutes.
  • Take the biscuits out of the oven, allow to cool-I double baked these biscuits for another 15 minutes- the texture of these biscuits are shortcake like with a soft and crunchy texture.

Notes/Tips

These biscuits can be made with egg. I used flaxseed and oats for the extra texture and fibre.
