- Soak chickpeas overnight. After soaking is over drain the water completely.
- Boil the chickpeas. Strain it and keep aside
- Chop all the vegetables and keep aside.
- Grind mint leaves, coriander leaves, garlic paste and green chilli in a blender to make a smooth paste.
- Now, in a large bowl, combine boiled chickpeas with mint mixture and chopped veggies.
- Add black pepper powder, extra virgin olive oil and salt to taste. Toss and mix properly. Enjoy this healthy protein salad.
