Ingredients

  • 1 cup mint leaves
  • 1/4 cup coriander leaves
  • 1 inch ginger piece
  • 4-5 garlic
  • 2 medium-size onions, sliced
  • 4 tbsp oil
  • 1 bay leaves
  • 1 cinnamon stick
  • 4 cloves
  • 1 tomato, chopped
  • 2 small potatoes, chopped
  • 1/2 cup peas
  • 1 tsp coriander powder
  • 2 tsp red chilli powder
  • as needed Salt
  • 1/2 tsp garam masala
  • 1 cup basmati rice
  • 2 cups water

Instructions

  • Wash mint leaves, coriander leaves and ginger- garlic. Add them to the mixie and grind it to smooth paste. Add little water if required and keep aside.
  • Heat oil in a heavy vessel and add bay leaves, cloves and cinnamon sticks. Saute for a few seconds and then add onion. Cook onion till it's translucent.
  • Now add the mint paste and all the veggies potatoes, peas and tomatoes. Saute for 2 minutes.
  • Add rice, water, salt, coriander leaves, red chilli powder, and garam masala and bring it to a boil.
  • Cook rice on low flame until it's cooked in your preferred way.

Notes/Tips

Serve mint rice with the raita or plain yoghurt.
