- Wash mint leaves, coriander leaves and ginger- garlic. Add them to the mixie and grind it to smooth paste. Add little water if required and keep aside.
- Heat oil in a heavy vessel and add bay leaves, cloves and cinnamon sticks. Saute for a few seconds and then add onion. Cook onion till it's translucent.
- Now add the mint paste and all the veggies potatoes, peas and tomatoes. Saute for 2 minutes.
- Add rice, water, salt, coriander leaves, red chilli powder, and garam masala and bring it to a boil.
- Cook rice on low flame until it's cooked in your preferred way.
