Quinoa and peas patty

  • Quinoa
  • Water
  • Peas
  • Onion
  • Oregano
  • American corn
  • Wheat flour
  • Sea salt
  • Tomatoes
  • Onion
  • Cucumber
  • Yogurt
  • Burger bun

Instructions

  • Cook the quinoa as per the instructions on the box.
  • In a large bowl, mash the peas using a potato masher. Add the onion, oregano, corn and quinoa and mix until well combined. Add the flour, salt and pepper and mix. Shape the mixture into a patty.
  • Place on a plate, cover with plastic film and refrigerate for 30 minutes. Preheat the oven to 180*C and line a baking tray with baking paper. Place the patty on the lined baking tray and spray lightly with oil.
  • Bake for 15 minutes then turn carefully and bake again for 15 minutes. Remove from the oven and let it rest for 5 minutes. To serve, lightly toast the bun. On one half, layer the lettuce, patty, tomato, onion, cucumber and yogurt. Enjoy!
