Ragi Dhoodh Pooli payasam

Ingredients

  • 1. Milk 1 litre
  • 2. Rice atta flour 300 gm
  • 3. Ragi atta 200gm
  • 4. Rava 100gm
  • 5. Elachi powder 2tsp
  • 6. Grated Coconut 100gm
  • 7. Jaggery 3 tsp
  • 8.Ghee 2tsp
  • 9. Chopped Almonds 2tsp
  • 10. Chopped cashewnuts 2tsp

Instructions

  • First heat water in a Mitti Handi high flame. In the meantime grind the rice to coarsely rice powder. Now take one and half cup of rice powder, Ragi powder and Rava and keep adding to the boiling water to make a dough, add a liitle ghee and salt to the dough. Knead the dough finely so that the pooli pithas will be soft.
  • For the stuffing: Coconut Ragi dry fruits stuffings Heat ghee in a Mitti Handi and add the grated coconut, keep adding the jaggery and Ragi atta. Gradually add the dry fruits and prepare the stuffing mixture. Add a little milk, so that the stuffing mixture doesn’t get burnt.
  • Step 3: Now to make the poolis pithas, give the shape of a Shankh or any preferred shape.
  • Step 4: Steam the poolis on mitti handi with a help of a steamer vessel
  • Step 5 Once done keep it aside. Add the poolis in the boling milk . Keep stirring the poolis and Rabri milk, till the milk reduces to half and a thicker consistency. Now add elachi powder, and allow to cool. Refrigerate and serve chilled with dry fruits

Notes/Tips

My Tip: Keep stirring on low flame, add atta or ghee to the dough for soft pitha poolis.
