Ingredients

  • 1 cup Refined flour
  • 3 tbsp ghee
  • 1 tsp lemon juice
  • 1/2 cup chilled milk
  • 2 cups water
  • 7-8 Pieces ice
  • 1 cup sugar
  • 1/2 cup water
  • 1/2 tsp cardamom powder
  • as needed Ghee or oil for frying

Instructions

  • Add ghee to a large mixing bowl. Now add 6-7 ice cubes and whip with a whisk or rub with the fingers.Keep rubbing or whipping until the ghee becomes white, light and fluffy.
  • Add maida to the creamed ghee and mix, Add chilled milk and mix. Add little water make a thick batter. Whip the mixture well for about 5 minutes.
  • To the batter, add the lemon juice and the remaining water to the mixture and form it into a thin batter. Now the batter is ready.
  • Fill a deep saucepan half with ghee.Now heat it on high heat.Pour the 2 tbsp of batter keeping a good distance from hot ghee.the batter will splatter and later the froth subsides.
  • Repeat 10-15 times pull the ghevar out once cooked, and drain off the oil or ghee completely.keep aside
  • Mix 1 cup sugar, 1/2 cup water and cardamom powder in a pan and boil on medium high heat for 5-6 minutes. Pour a drop of syrup on a plate to check. Take it between your thumb and a finger and see if it sticky or not. If you feel stickiness between your fingers forming a single string, then your syrup is ready. Remove it from the heat and let it cool slightly. But don't let it cool completely, we need warm syrup for Ghevar.
  • Pour the sugar syrup over ghevar.Garnish with chopped nuts and serve.
