Raw Papaya Barfi

Ingredients

  • 1/2 kg Raw Papaya
  • 1 cup Milk
  • 1 and 1/2 cup Sugar
  • 2 tbsp Ghee
  • 2 tbsp chopped Nuts
  • 1 tbsp Raisins
  • 1/2 tsp Cardamom powder
  • 1 tbsp Pistachios, chopped
  • A few Saffron strands

Instructions

  • Wash and peel raw papaya.
  • Grate it from manual grater.
  • Heat ghee in a nonstick wok.
  • Transfer grated papaya in it.
  • Cook on medium heat for 5-6 minutes.
  • Add milk and cook till milk evaporate.
  • Add sugar and stir continuously to avoid burn.
  • Cook on medium heat till mixture turn dry and ghee starts separate from it.
  • Add Cardamom, chopped nuts and raisins.
  • Cook for 5 minutes more.
  • Grease a square pan from ghee.
  • Transfer this mixture in it.
  • Flatten with spoon, sprinkle chopped almond and pistachios.
  • Cut in square and serve.
