- Boil water in a pan with 1 tsp salt.Add macaroni and cook till they are Al Dente(firm bite)or just done.Do not overcook them as they will turn mushy. Drain water,reserving stock,and set macaroni aside adding 2 tsp olive or vegetable oil.
- For making pasta : Heat oil in a pan.Add minced garlic.Fry few minutes. Then add chopped onion.Saute on medium flame till translucent.Add chopped green chilli then the vegetables and stir fry adding salt to taste.In a separate pan fry the tomatoes till they are pulpy.Add this to the sautéed vegetables.Also add hot and sweet tomato sauce, 1/4 th tsp red chilli powder,red chilli flakes, mixed herbs, black pepper powder and mayonnaise.
- Toss till well mixed with vegetables. Add half cup boiled pasta stock.Give it a boil.Lower the flame and add the boiled pasta.Toss gently in low flame till the vegetables and pasta mix well. Lastly add 1 tbsp more homemade tomato puree to give it a tangy taste.Sprinkle some more chilli flakes,mixed herbs,chopped coriander and 1 tbsp more mayonnaise. Give it a toss.
- Garnish with grated cheese and serve a bowl of steaming hot macaroni in breakfast, brunch or dinner to family or friends.
