- Peel skin of ridge gourd and slit. In the mixie jar, blend dry roasted sesame seeds into powder. To it, add ground nuts, tomato, onion, red chili powder, coriander powder, cumin powder, turmeric powder, coriander leaves, salt and blend into smooth paste. Check for seasoning and stuff this mixture in the ridge gourd. Heat little oil in a pan, place stuffed ridge gourd and cook for 5 minutes on slow flame with lid on it. Add tamarind juice along with leftover masala and cook with closed lid. At last, add coriander leaves and mix slightly. Now ridge gourd masala is ready to serve with rice.
