- Peel off the banana. In mixing bowl add ripe banana and mashed it.
- Add butter/ghee & powered sugar. Mix well and beat with hand blender or whisker until light & creamy.
- Now sieve the flour,semolina, baking powder, soda & nutmeg powder in fluffy batter. Mix well.
- Now add cardamom powder, cashews and pistachios. Knead it and make tight dough for cookies.
- On high flame preheated the wok/ cooker add salt & place stand. Now cover the lid for 5 minutes.
- Now knead dough again & make small sized ball then slightly flatten with palm. Prepare all cookies with same method.
- For garnishing : put some cashews and pistachios center of the cookie than press slightly. Cookies are ready for baking.
- Greasing the baking plate / try with butter/oil/ghee. Arrange cookies on a greased plate.
- Place the plate preheated wok and cover with lid. Baked on medium to low flame for 25- 30 minutes.
- Now check cookies with tooth pick/knife. If toothpick is clean then switch off the flame.
- Now take out the baked cookies and keep aside for completely cooling.
- Ripe Banana Cookies ' is ready to serve or store in airtight container. Enjoy!
