Royal Kesar phirni

  • Milk (Full cream)
  • Rice
  • Condensed Milk
  • Kesar strings
  • Rose petals

Instructions

  • Take 3tbsp of rice(pref basmati) and Soak in Water for 15-20min.
  • Take a pan with thick base and pour Full cream milk in it and switch on the gas .Let milk come to a boil
  • Till the time milk is heating up ,drain water from rice .In a blender ,put the rice and blend in a fine granular form like sooji consistency ..
  • Once milk starts boiling ,add granular rice in it .bring the flame to low .Keep stirring otherwise lumps will start forming.
  • Mix 2 pinch of Kesar strings in this milk -ricw mixture .Now let it boil stirring continuously till the time itvrefuces and thickens .Rice and milk should become one .
  • Once it thickens,pour condensed milk and stir it for few More minutes .Remember it will further thicken once it cools down so keep the consistency accordingly
  • In a small quantity of warm milk place few Kesar strings to be used later doe garnishing
  • Now add a pinch of cardamom powder in phirni and stir
  • Your Phirni is ready to be served in traditional earthern bowl called SAKORA.
  • Pour in SAKORA or any bowl .garnish it with slivered almonds,Kesar strings and few drops of Kesar dipped milk .garnish with rose petals and keepnin fridge for setting
  • Phirni should be served chill .Donot freeze.

Notes/Tips

1. Always use Full cream milk .It gives a good texture to phirni. 2. Keep stirring constantly to avoid lump formation. 3. Keep scraping the malai that gets collected at the walls of the pan .It adds on to the flavour. 4. HAVE PATIENCE AND THE OUTCOME WILL BE AWESOME
