  • Cardamom
  • Saffron
  • Cashew
  • Raisins
  • Vermicelli
  • Full cream milk

Instructions

  • Place a heavy kadhai over medium heat and pour in ghee. Once hot, toss in cashew nuts and sauté till golden. Add raisins and stir till they plump up. Add in vermicelli, stir, and roast in the oil till golden, 1 to 2 minutes. Pour in 300 ml hot water and stir till the vermicelli softens, 1 to 2 minutes. Tip in sugar and stir till dissolve and reduced just a bit, about 3 minutes. Pour hot milk over the vermicelli. Stir well to mix. Bring to a boil and then reduce heat to medium. Toss in cardamom powder, stir, and cook for 4 to 5 minutes. Stir in the saffron milk and simmer for 1 minute. Remove from heat and serve either hot or chilled.
