Instructions

  • In a mixer jar take 1 cup rava, 2 tbsp wheat flour, ¾ tsp sugar and 1 tsp salt. grind to a fine powder and transfer to a large bowl. add 1 cup curd and mix well. also, add water as required and whisk to form a smooth batter. cover and rest for 15 minutes. Take a large pan heat 2 tbsp oil, add 1 tsp mustard, ½ tsp urad dal, ½ tsp chana dal, ½ tsp cumin, pinch hing and few curry leaves. splutter the tempering. add 3 chilli, 1 inch ginger, 1 onion and saute until the onions soften slightly. further, add ½ tsp turmeric, ½ tsp salt. saute on low flame. Then add 4 potato and mix well. mash and mix add ¼ cup water. also, add 2 tbsp coriander and ½ lemon. mix well. And keep aside. pour a ladleful of batter on hot tawa. spread slightly thin to make crispy dosa. spread some oil and butter uniformly. also, place 2 tbsp of prepared aloo masala in the centre. roast until the dosa turns golden brown and crisp. scrape the sides of the dosa and fold half. And serve hot.
