Instructions

  • Rinse and soak chana dal for 1 hr. then drain the water completely and keep ready to blend. Boil 1/2 liter of water in a vessel, when water begins to boil add soya chunks, boil it for 5 min, then switch off the flame, drain the water in a colander, allow it to cool for a while, squeeze and remove the water it. Add green chilies, ginger, garlic, clove, and cinnamon in a blender make a paste without adding water. Add soya chunks, blend it to a coarse mixture without adding water. Remove the blended mixture in a bowl, In the same blender add soaked and drained chana dal blend it to a coarse mixture without adding water. Mix the blended mixture with chopped onion, coriander, and pudina. Add salt and cooking soda, mix well. Heat oil in a pan to deep fry, once it is ready, take a lemon size of the prepared mixture and tap it to a round shaped fritter on your left palm, remove and drop it to oil, Fry until light brown and crisp for both sided in two or three batches on medium flame. Once the vadas are golden brown and crisp remove it from oil with a slotted spoon, drain excess oil, put it on a plate spread with a kitchen tissue. Serve hot.
