Ingredients

  • Pumpkin puree
  • All purpose flour
  • Condensed milk
  • Milk
  • Oil /melted butter
  • Baking powder
  • Baking soda
  • Chai masala
  • Salt
  • Almond and pistachio slivers
  • Mixed seeds
  • Turmeric powder
  • Cinnamon powder

Instructions

  • Peel and chop two cup pumpkin.Boil it and once cooled,puree it.Keep aside.
  • In a bowl sieve flour,baking powder,baking soda,salt .Keep aside.
  • In a mixing bowl,whisk butter,condensed milk,milk together till incorporated well.
  • Add pumpkin puree,turmeric powder and chai masala.Mix well.
  • Now fold in the dry ingredients into this.Mix gently.There should be no l;umps.
  • Add one tbsp seeds n almond and pistachio slivers.Give a gentle mix.
  • Pour the batter in a greased 8 inch mould.Tap gently 4-5 times so that no air bubbles remain.
  • Garnish with remaining seeds,almond and pistachio slivers.Sprinkle cinnamon powder on the top.
  • Bake in preheated oven at 180 degrees for 35-40 minutes or till tooth pick comes out clean.
  • Let it come to room temp and then demould.Ideal with that hot cuppa coffee or tea.

Notes/Tips

The batter should be of pouring consistency.If you feel,it is thick,add some milk. The chai masala I have used is homemade.It has lots of spices which are helpful in boosting our immunity. Pumpkin is also a rich source of vitamins and antioxidants which helps us to keep our body fit.
