  • Thinly chopped spinach
  • Seedless dates
  • sea salt
  • sugar (optional)

  • Finely chop the dates, remove seeds (if any). In a bowl, add thick curd and whisk well to get a creamy texture.
  • Add the dates to curd and mix well. Allow the curd to rest for 2-3 hrs (this will soften the dates and incorporate its sweet flavour).
  • Wash the spinach leaves with ice cold water. This makes them fresh and crunchy.
  • Finely chop the leaves, using a sharp knife.
  • Few mins before serving add the chopped spinach leaves, salt and sugar. Mix well.
  • Spinach & Dates Raita is ready!

Notes/Tips

Pro Tips: • You can also use raisins along with dates for sweetness • Adding a pinch of salt, enhances the flavour • Do not add spinach in advance, as it will lose its crunchiness
