Spinach Rice with veggies in peri sauce

  • Spinach
  • Mint and coriander
  • Green chillies
  • Ice cube
  • Garlic
  • Red chilli flakes
  • Cooked basmati rice
  • Lime juice and Black pepper
  • Peri peri mix
  • Oats
  • Oil
  • Milk
  • Veggies of your choice (sweetcorn , broccoli ,red

Instructions

  • Set a wok on medium heat add oil oats powder and it for a minute add garlic and saute for a minute add milk slowly and gradually and whisk well ensuring no lumps for 3-4 minutes
  • Add salt to taste ,peri peri mix ,stir and cook for 2-3 minutes add veggie stir and Cook for 2-3 minutes Add freshly chopped parsley
  • Spinach Rice method Blanch spinach and transfer the spinach in grinding jar along with green chillies ice cube coriander leaves mint and grind in smooth paste
  • Set a wok on medium heat add butter chilli flakes after add the spinach puree and cook for 4 -5 minutes .now add cooked rice add salt to taste and lemon
  • Serve hot with veggies and spinach Rice

Notes/Tips

If you're vegan then swap paneer with tofu and milk with coconut milk....
