Strawberry Cake with Cream Cheese Frosting

  • All purpose flour (Maida)
  • Baking powder
  • Baking soda
  • Lemon zest
  • Confectionery Sugar/Icing Sugar
  • Vegetable oil (should not have any smell)
  • Hung curd
  • Vanilla Essence/ Vanilla pod extract
  • Milk
  • Fresh strawberries (thinly sliced)
  • Cream cheese
  • Butter
  • Confectionery sugar/icing sugar
  • Vanilla extract
  • Fresh strawberries

Instructions

  • Make sure all the ingredients are in room temperature. This is one important step before you start baking.
  • Pre-heat the oven at 180° C. Apply butter in the baking Pan generously or line the pan with Parchment Sheet.
  • In a medium sized bowl, Mix all purpose flour, baking soda, baking powder and lemon zest Together.
  • In another big bowl, add oil, confectionery sugar and best until the mixture has changed to a light cream colour. This step is important to make the cake fluffy.
  • Add hung curd to the Mixture and mix well.
  • Add the milk along with the vanilla essence to the Mixture.
  • Added the dry ingredients (all-purpose flour, baking soda and baking powder and lemon zest mixture) to the wet ingredients bowl. Do this in parts to avoid any lumps in the cake batter.
  • Once the dry and wet ingredients have been mixed well, add fresh strawberries (sliced) To the mixture. Fold the strawberries in the mixture to avoid breaking them. Make sure you do not over-fold the batter.
  • Pour the cake batter into the baking pan and put the Pan In the Oven. Take precaution, Since the oven will be hot.
  • Watch the cake batter slowly rose up into folder brown cake, I love watching my cakes raise into beautiful golden domes! :)
  • Now, let's move to the frosting for the lovely cake! Add butter to the bowl and beat it until it has changed to a light cream colour and is light.
  • Add cream cheese and vanilla essence to the butter and beat them together. The mixture will be light and fluffy.
  • Now add sugar to the mixture. Best the mixture again and maintain the consistency for proper frosting.
  • Make sure you add the frosting to the cake only after the cake has cooled down. If the cake is hot while you add your icing, it'll start melting.
  • After adding the icing to you cake you can add fresh strawberries and decorate the cake. Common, wear your thinking hats and become creative with you cake!

Notes/Tips

1. You can alternatively use the wheat flour as a healthier option. 2. You can use home-made Curd instead of hung curd. Make sure you remove the excess water from the curd before you use it. 3. You can use the same recipe to make strawberry cupcakes too!
