Superfood Quinoa Salad?

  • Uncooked Quinoa
  • Onion chopped
  • Chopped carrot
  • Chopped Bell Pepper
  • Grated Ginger-garlic
  • Olive Oil
  • Turmeric powder
  • Salt
  • Chili powder
  • Curry powder
  • Fresh Lemon juice
  • Water
  • Spring onions

Instructions

  • Add quinoa to a fine mesh strainer, and then rinse under cool water for 30 seconds to a minute.
  • To cook the quinoa: Combine the rinsed quinoa and the water in a medium saucepan. Bring the mixture to a boil over medium-high heat, then decrease the heat to maintain a gentle simmer. Cook until the quinoa has absorbed all of the water, about 15 minutes,
  • Heat oil in a pan. Add grated ginger-garlic and saute for few seconds. Now add onion, saute it for a minute.
  • Add carrot, bell pepper, season vegetable with salt and saute for a minute.
  • Now add turmeric powder, chili powder and curry powder. Let it cook for a minute.
  • Add quinoa into the sauted veggie mixture, cook for a minute. Fluff them up with fork. Add lemon juice, an extra drizzle of olive oil and spring onions. Enjoy Quinoa Salad. It help strengthen the immune system, so Quinoa is great to eat during these months

Notes/Tips

Quinoa contains small amounts of the heart healthy omega-3 fatty acids, rich in fiber, minerals, antioxidants and all nine essential amino acids. [1] Rinse it under running water that removes any bitterness on the outside of the quinoa. [2]Use twice as much water as quinoa, as usual, then cook uncovered until the quinoa has absorbed all the water. [3]1 part of uncooked quinoa and you will end up with three times as much cooked quinoa. [4]You can also add Cucumber, Spinach , Corn, Chickpeas etc.
