  • Rice
  • Urad Daal
  • Chana daal
  • Methi seeds
  • Salt
  • Tomato-carrot puree
  • Spinach puree
  • Grated paneer
  • Chopped tomatoes
  • Chopped coriander leaves
  • Ghee

Instructions

  • Wash and soak the rice in a large bowl overnight. Wash and soak the daal, methi seeds in another bowl.
  • Grind both to a smooth batter using little water. Let it ferment for 6-8hours, duration may change depending on the weather.
  • Add salt to the batter and mix well. Adjust consistency by adding water if needed. Take 1 cup of batter in 3 bowls, add the tomato-carrot puree and spinach puree to one bowl each. Mix well.
  • Heat a tava, add a ladle full of batter and add little ghee on the sides. Spread the topping as per the color and flip the uttapam once bubbles appear on top and its cooked from sides. Cook from both sides till crispy. Serve hot with chutneys of choice.
