- Wash and wipe the Ridge Gourd. Peel off the skin using a peeler. Cut them into ½ inch long pieces. Heat the Oil in a pan. Add Mustard Seeds, Urad Dal. When the Mustard Seeds start crackling, add the Green Chillies and crushed Garlic. Sauté them a minute. Add Curry Leaves and Onion. Cook them till the Onion turns translucent. Add the Ridge Gourd and Salt.. Simmer for 5 to 6 minutes in low medium flame till the vegetables become soft. There is no need to add water. Cook it dry only. Add the grated Coconut. Mix well. Serve hot.
