Ingredients

  • 5 Cups milk, full
  • 1/4 cup rice (washed)
  • 10-12 raisins
  • 4 green cardamoms
  • 10-12 almonds
  • 10-12 strands of saffron
  • Raw Turmeric
  • 10 grams of pistachios
  • One sheet of silver foil (varak)
  • 1 + 1/2 cup sugar

Instructions

  • 1.Soak the rice overnight 2.Grate the turmeric and extract some of the juice from it and add saffron and turmeric to the milk and boil it untill it thickens. Crush the rice and add it to the milk and simmer over low flame and stir it untill the rice is cooked and the milk becomes thick. 3.When done add sugar, raisins, almonds and cardamoms. 4.Stir till sugar gets dissolved properly. 5. Transfer into an earthen pot. 6. Transfer into a serving dish and garnish with almonds, pistachios, saffron strands and silver foil (varak). 7.Serve hot or chilled.

Notes/Tips

1: To prevent your rabdi from being grainy, soak the rice properly overnight and crush it evenly before adding it to the milk. 2: To get an earthy flavour, pour hot rabdi into an earthen pot and cover it for sometime.
