This Christmas I made a simple vanilla sponge cake? topped with fresh strawberry?glaze. I chose to make this cake in a Bundt pan simply because of Christmas?vibes. But this cake is really all about that strawberry glaze. Not only does it give this cake a gorgeous colour but it gives it that amazing strawberry flavour too.

Ingredients

Ingredients

  • Wheat flour 1 cup
  • Jaggery 1/2 cup
  • Oil 1/4 cup
  • Vanilla extract 1 tsp
  • Baking powder 1 tsp
  • Water 3/4 cup
  • Baking soda 1/2 tsp
  • 2 cups strawberry
  • 3/4 cup sugar
  • 1 Tbsp lemon juice

Instructions

  • Cook until Jaggery is dissolved in water
  • Mix and sieve ( flour + Baking soda and baking powder)
  • Pour Jaggery and mix it well
  • Pre beat the oven at 180 Degree and bake for 30 to 40 mins Or check with tooth pick
  • For strawberry glaze Take 2 cups of strawberry roughly chop it and add to a pan then add 3/4 cup sugar And lemon juice 1 Tbsp Cook until its consistency is thick
  • When cake is baked Let it cool down Then add the glaze on top and garnish with mint leaves .

Notes/Tips

You can make glaze with your fav fruit like mango pineapple etc
