Rice loaded with veggies and whole spices

Ingredients

  • Soaked rice 1 cup
  • Mix vegetables 1 cup
  • Whole spices 1 each
  • Oil 1 tbsp
  • Ghee 1 tbsp
  • Cumin seeds 1 tsp
  • Caraway seeds 1 tsp
  • Garlic ginger Chilli paste 1 tbsp
  • Slice onion 2
  • Chopped bell pepper 1/2 cup
  • Salt to taste
  • Black pepper powder 1/2 tsp
  • Lemon juice 1/2
  • Coriander 1/2 cup
  • Mint 1/4 cup

Instructions

  • Cook the rice 80%, by adding oil and salt
  • Pa boiled the vegetables
  • Now in pan heat the oil and ghee add cumin seeds, Caraway seeds and whole spices. Coriander and mint leaves.
  • Now add ginger Chilli garlic paste and onion slices Saute for 2-3 minutes
  • Add the cook rice and vegetables in it. Add salt and pepper and lemon juice.
  • Serve it hot with raita I have served promogranate raita.

Notes/Tips

Mix vegetables means carrots, beans, cauliflower, peas,corn and potatoes and any choice of yours. Whole spices means cinnamon stick, cloves, black pepper, bay leaf, green and black cardamom and star anise.
