- Boil the sevai. Boil the chopped vegetables and keep aside. Chop the onions, tomatoes and ginger. Slit the green chilli. In a pan, heat 1 tbsp oil. Add mustard seeds and asafoetida. When they crackle, add chana dal and urad dal. Once the dal turns brown, add the chopped onions, ginger and curry leaves. Fry till the onions turn soft. Now add the chopped tomatoes along with turmeric powder, salt and garam masala powder. Fry till the tomatoes turn soft and mashed well. Add the boiled vegetables along with cooked sevai and fry for a few minutes. Garnish with coriander leaves and serve vegetable sevai hot.
