- In a large bowl, combine rice, tomatoes, edamame, pine nuts, basil, lemon juice, lemon zest, salt and pepper. Mix together well.
- Add 1 tbsp of olive oil to a medium skillet on medium high heat. Sauté zucchini with occasional stirring for about 4 minutes. Combine the zucchini with the rice. Add the remaining olive oil and toss. Top with cheese and serve.
