- Fry the vegetables separately and keep in a bowl
- Add ginger garlic paste,salt,lime juice and curd
- Fry the onions in the rest over oil and add to the vegetables along with the rest of the spices and mix well
- Boil rice in the water adding salt, lavang and dalchini salt
- Put the vegetable mix in thick flat vessel pour half boiled rice over it in two to four layers repeating the process
- Cover the vessel with aluminium foil and put the lid
- Keep it on slow flame and cook for half an hour until the rice is fully cooked
- Add ghee and kothimmeera in the end
