This is a semi dry curry with a mix of paneer and vegetables.

Ingredients

  • Chopped vegetables ( beans, carrot, bell pepper) -
  • Sweet corn - 1/2 cup
  • Onion slices - 1/4 cup
  • Tomato pieces - 1/4 cup
  • Tomato puree - 1/2 cup
  • Tomato ketchup - 2 tbsp
  • Green chillies- 2
  • Jeera ( cumin ) -1 tsp
  • Turmeric powder - 1/2 tsp
  • Red chili powder - 1tsp
  • Oil - 2 tsp
  • Ginger garlic paste -1 tsp
  • Garam masala - 1/4 tsp
  • Kasuri methi - 1/2 tsp
  • Salt to taste

Instructions

  • Boil vegetables like carrot, beans and sweet corn till done.
  • Heat oil in thick bottomed pan. Saute jeera and 2 slit green chillies.
  • Add onion slices, 1 tsp ginger garlic paste. Saute for few minutes.
  • Add capsicum pieces and tomato pieces and fry till capsicum is soft but not mushy.
  • Mix in tomato puree and tomato ketchup.
  • Add turmeric powder, red chilli powder and salt.
  • Now time to add boiled vegetables and paneer pieces and give a thorough mix.
  • Finally add garam masala and kasuri methi.

Notes/Tips

Cut all the vegetables and paneer length wise to give a uniform look.
