Juicy and succulent asparagus is a delicacy that is presented to us in the vibrant spring season. Onions and pepper complement the exotic flavour of asparagus beautifully. So I decided to combine them to make of these. Mild in flavour yet addictive this soup turned out to be one of the demanding in the family.

Vegetarian Asparagus Soup

Ingredients

  • 3/4 cup fresh asparagus,
  • 1 /2 cup onion, chopped , fine diced
  • 1 tbsp butter and 4 cups vegetable stock
  • 1/2 cup milk , 3 tbsp cornflour
  • 1/2 tbsp white pepper powder
  • Salt to taste
  • chopped (preferably thin slits )
  • 1 / 4 tbsp black pepper powder

Instructions

  • Prepare the vegetable stock ( vegetarian ) and keep aside. To enhance the taste of the vegetable stock , I added three to four long slits of fresh asparagus.
  • In a pan, heat the butter. As it melts, add the chopped asparagus and finely diced onion. Saute for about 5 - 7 minutes .
  • Now add the prepared vegetable stock and mix. Give a boil on high flame. Now in a bowl, mix the milk and cornflour to get a smooth liquified paste.
  • Add the same to the soup being prepared in the pan. Stir well and add the pepper powders and salt. Stir again and give boils on high flame. Remove from flame.
  • Serve this fresh and hot with Cheese tosties and a dish like Potato jackets with Garlic Loaf.

Notes/Tips

I preserve the unused asparagus sticks by wrapping them with cling film.
