Watermelon Mint Salad

Ingredients

  • Chopped watermelon - 2 cups
  • Fresh mint -½ cup
  • Extra virgin olive oil for dressing - 1 tbsp
  • Lemon juice - ½ tbsp
  • Black pepper powder - 1tsp
  • Salt to taste

Instructions

  • In a bowl mix chopped watermelon, mint leaves, lemon juice and olive oil.
  • Add black pepper powder and salt.
  • Toss all together nicely.
  • Enjoy the refreshing salad.

Notes/Tips

1. You can make the salad in advance and keep it in refrigerator. 2. Toss the salad again before serving.
