- Heat oil in a thick bottomed pan and splutter mustard seeds. Shallow fry chopped shallots and add chilli flakes and curry leaves. Once shallots are translucent add watermelon rind and mix well. In low flame cook the watermelon rind for 15 minutes. Stir after each 2 to 3 minutes. When the watermelon rind is cooked add salt to taste and mix well. Switch of the flame. And serve.
