White pumpkin curry

Ingredients

  • 250 gms white pumpkin
  • 1/2 cup curd
  • 1/2 cup coconut grated/powder
  • Salt to taste
  • 1 sp turmeric powder
  • 1 sp pepper powder
  • 3 green chillies
  • 1 red chilly
  • 6 curry leaves
  • 1/4 sp methi seeds
  • 2 sp coconut oil
  • 1 sp mustard seeds

Instructions

  • Peel the pumpkin skin chop in cubes,boil it in water till soft(add turmeric powder)
  • Grind to paste with coconut, pepper powder, green chillies.
  • Mix curd with some water and whisk it with no lumps,add this to ground paste.
  • Now add curd mixture to cooked pumpkin add salt cook on sim flame for a while.
  • Prepare tadka with coconut oil, mustard seeds red chilly and curry leaves,methi seeds,add to curry and it's ready to serve with steamed rice.
