Whole Wheat Apple Jaggery Muffins

Ingredients

  • 1 cup whole wheat flour
  • 1/4 cup chopped walnuts
  • 3/4 tsp baking powder
  • 1/4 tsp soda
  • 1 tsp ground cinnamon
  • Pinch of salt
  • 1/4 tsp ground all spice (nutmeg + cloves)
  • Wet ingredients: 1/4 cup milk (if required)
  • 1/3 cup Jaggery Powder
  • 1/3 cup olive oil
  • 2 flax eggs ( 2 tbsp ground flax seeds + 4tbsp wat
  • 1 cup grated apple (1 apple)

Instructions

  • Mix the dry ingredients in a bowl.
  • Whisk the wet ingredients in a separate bowl until combined well together.
  • Mix the dry ingredients with the wet ingredients. Add milk if the batter is too thick.
  • Lastly, add the grated apples. And stir.
  • Spoon this mixture in a greased muffin tray. Bake at 220degC for 5mins and decrease the temperature to 180degC, bake it again for 25-30mins.
