Ingredients

  • Whole wheat flour 1.5cups
  • Baking powder 1.5tsp
  • Baking soda 1/2 tsp
  • Light brown sugar 1/2cup
  • Finely grated carrots 1/2 cup
  • Curd 1/2cup
  • Milk 1/2 cup
  • Fresh Orange juice 1/4 th cup
  • Flavor less cooking oil 1/2 cup
  • Chopped walnuts 1/4th cup
  • Orange zest 1tsp
  • Salt Small pinch
  • Vanilla extract 1/2tsp
  • Cinnamon powder 1/4th tsp
  • For glaze fresh Orange juice 1.5tbsp
  • Icing sugar 1/4th cup

Instructions

  • Preheat the oven at 180°c for ten minutes
  • In a mixing bowl add all the dry ingredients namely whole wheat flour,Baking powder,Baking soda,Salt and Cinnamon powder
  • In another bowl add all the wet ingredients namely brown sugar,oil,curd,milk, orange juice, Vanilla extract and orange zest.Whisk until the mixture is well combined and the sugar has dissolved.
  • Now in batches add the dry ingredients to the wet ingredients and whisk gently until there is no dry mixture
  • Add finely grated carrots and chopped walnuts ,fold them gently
  • Add the prepared cake batter to a nine Inch baking tin. Smoothen the batter and pat it down. You can top it with walnuts and carrots for decoration. That's totally optional.
  • Bake at 180°c for approximately 45 to 50minutes
  • Remove the cake from the oven and let it cool a bit before removing it from the tin.
  • Meanwhile make the Orange glaze by mixing fresh Orange juice and icing sugar.
  • Drizzle the glaze on the cake while it is still warm

Notes/Tips

You can use maida instead of wheat flour Check the cake after thirty five minutes and increase the time till the skewer comes out clean.
