- Boil green peas and spinach in water for 15 mins after washing.
- Strain the vegetable stock and reserve it.
- In a pan, add olive oil, onion and garlic and fry until onion turns translucent.
- Add the boiled peas, spinach, basil, pepper and salt in the same pan and cook for 3-4 mins.
- Add vegetable stock, heavy cream. Mix well and let it simmer for 3-4 mins.
- Add lime juice and give a good mix.
- Use a hand blender to blend and make it into a smooth consistency. Soup is ready.
- Serve soup in a bowl, drizzle some olive oil, roasted sesame seeds and serve warm.
