Ingredients

  • Grean Peas
  • Spinach
  • Water
  • Olive Oil
  • Chopped onion
  • Garlic pods
  • Dried basil
  • Salt
  • Crushed pepper
  • Heavy cream
  • Lime juice

Instructions

  • Boil green peas and spinach in water for 15 mins after washing.
  • Strain the vegetable stock and reserve it.
  • In a pan, add olive oil, onion and garlic and fry until onion turns translucent.
  • Add the boiled peas, spinach, basil, pepper and salt in the same pan and cook for 3-4 mins.
  • Add vegetable stock, heavy cream. Mix well and let it simmer for 3-4 mins.
  • Add lime juice and give a good mix.
  • Use a hand blender to blend and make it into a smooth consistency. Soup is ready.
  • Serve soup in a bowl, drizzle some olive oil, roasted sesame seeds and serve warm.

Notes/Tips

Do not overcook veggies to retain their maximum nutrients.
