Zucchini Soup

Ingredients

  • Zucchini 1
  • Olive oil 2 tsp
  • Chopped garlic 1 tsp
  • Chopped onion 1
  • Chopped bell pepper each 1/2
  • Chopped Green chilli 1/2 tsp
  • Salt to taste
  • Red chilli flakes 1/2 tsp
  • Cheese spread 2 tbsp
  • Peri peri masala 1 tsp
  • Water to adjust the consistency

Instructions

  • Chop the zucchini and boil till soft. Allow to cool at room temperature then blend it smooth.
  • Heat the oil in pan add all the ingredients one by one and saute each for 2-3 minutes.
  • Now add zucchini puree in it and adjust the consistency by adding water.
  • Serve it warm with nachos.

Notes/Tips

To make more rich and creamy use milk and water half half.
