Ingredients

  • Dry Kair Sanghri 2 cups
  • Oil 4-5 tablespoons
  • Hing (asafoetida) 1/4 teaspoon
  • Jeera (cumin seed) 1 teaspoon
  • Dry red chillies 3-4
  • Turmeric powder 1 teaspoon
  • Chilli powder 2 teaspoon
  • Salt To Taste
  • Dry Mango Powder 1 1/2 teaspoon
  • Garam Masala 1/4 teaspoon
  • Raisins (optional) 8-10

Instructions

  • Wash Kair and Sangri a few times to remove all the dirt. Soak in enough water for 8-10 hours or overnight. Boil them for 10-15 min or you can also pressure cook them till 1 whistle. Drain the water completely and transfer kair sanghri to a fresh dry bowl.
  • Once cold enough to touch add in the Salt , Turmeric Powder , Red Chilli Powder , Dry Mango Powder & Garam Masala and mix it nicely with hands simultaneously squeezing the kair sanghri so that it’s Juice oozes out and the masala gets nicely coated.
  • In a large kadai heat Oil & add in the Hing , Cumin Seeds along with the Dry Red Chillies and let it sizzle. Mix in the Kair Sanghri Mixture and let it cook for 2-3 Minutes till the masala leaves the oil.
  • If adding the Raisins make sure you soak them in water for 1-2 hours . Add them in the end & give it a mix. This is completely optional as it will add a hint of sweetness to the achari recipe.
  • The Achari Kair Sanghri is ready to serve. You eat it with your Chapati | Puri | Paratha as you like Hot | Room Temperature | Refrigerated making your summer meal Interesting !

Notes/Tips

Make sure you don’t overcook it so you need to keep checking every few minutes whether its done. If not enough time after washing soak them in warm water in a casserole until soft. Since it has a good amount of oil and sourness you can store them in the refrigerator for 3-4 days else you can also add in some extra oil and vinegar to the recipe and store it in the refrigerator for a week/10 days and enjoy it like a pickle during these heating summers !
