- Wash Kair and Sangri a few times to remove all the dirt. Soak in enough water for 8-10 hours or overnight. Boil them for 10-15 min or you can also pressure cook them till 1 whistle. Drain the water completely and transfer kair sanghri to a fresh dry bowl.
- Once cold enough to touch add in the Salt , Turmeric Powder , Red Chilli Powder , Dry Mango Powder & Garam Masala and mix it nicely with hands simultaneously squeezing the kair sanghri so that it’s Juice oozes out and the masala gets nicely coated.
- In a large kadai heat Oil & add in the Hing , Cumin Seeds along with the Dry Red Chillies and let it sizzle. Mix in the Kair Sanghri Mixture and let it cook for 2-3 Minutes till the masala leaves the oil.
- If adding the Raisins make sure you soak them in water for 1-2 hours . Add them in the end & give it a mix. This is completely optional as it will add a hint of sweetness to the achari recipe.
- The Achari Kair Sanghri is ready to serve. You eat it with your Chapati | Puri | Paratha as you like Hot | Room Temperature | Refrigerated making your summer meal Interesting !
