Ingredients

  • Rice flour 250gms
  • Water 1¾cups
  • Salt 1½tsp
  • Grated Ginger 1/2tsp
  • Crushed garlic 1tsp
  • Chopped onions 2
  • Turmeric powder 1/2 tsp
  • Chopped Green chillies 2
  • Mustard oil 2tbs
  • Chopped coriander For garnishing
  • Fresh lemon juice 1tsp

Instructions

  • 1) Heat 2 cups water in a pan and add 1tsp of salt to it. Once it starts boiling, reduce the flame and add the rice flour and mix them with a ladle thoroughly until the dough comes together nicely.
  • 2) Now, transfer the dough into a bowl and let it cool for sometime. Grease your palms with some oil and knead the dough well until it becomes smooth and pliable..
  • 3 ) Now, take a small portion of the dough and with the help of your palm roll it out into a long cylindrical strip. Take a sharp knife and cut the strip into smaller portions of 1inch
  • 4) Now, take the smaller portions and with the help of your palm roll them against the rolling board one by one to get the desired shapes of fingers.
  • 5)Now, heat 4 cups of water in a pan and let it boil. Once the water boils add the Rice fingers ( Aangoli pitha) one by one into it. The rice fingers will initiate fall into the bottom of the pan.
  • When you start noticing the rice fingers rising up and floating on top of the water surface. Remove them into a strainer with the help of a straining spoon.
  • Now, heat a pan and add 3 tbs of mustard oil. Now add chopped onions, and crushed ginger- garlic, and saute them for a minute.
  • add salt, red chilli powder and Turmeric and add the rice fingers, with some chopped green chillies and saute them for a minutes. Finally, sprinkle some freshly chopped Coriander and squeeze out a dash of lemon o top and give a final stir & finish Cooking
