Ingredients

  • 1 Long Brinjal/Eggplant 100 Gms
  • Gram Flour or Chana Besan 75 Gms
  • Baking Soda 20 Gms
  • Cumin and Coriander powder mixture 10 Gms
  • Black Sesame seeds 20 Gms
  • Sugar 1 tsp
  • Table Salt To taste
  • Chaat Masala/Aamchur (Dry Mango) Powder (Optional) 15 Gms

Instructions

  • Once you release them into the oil, let them get cooked one side for 1.5 to 2 minutes and then turnover.

Notes/Tips

-》During the mixing of the gram flour or Besan with Baking soda, extreme care needs to be taken such that the proportion of the two aforementioned grains has to be the following: Gram flour/Chana Besan = 80 % Baking soda = 20 %. The reason behind stick to this hard and fast rule is only to make sure that the end-result becomes crispy from the outside yet tender inside. -》Before releasing the Eggplant/Brinjal slices into the Wok shred off excess batter from them so they swell while cooking.
