  • salted butter, at room temperature 100 grams
  • granulated sugar 3/4 cup
  • eggs, at room temperature 2
  • vanilla extract 1/4 tsp
  • unsweetened cocoa powder 1/3 cup
  • baking powder 3/4 tsp
  • baking soda 3/4 tsp
  • all-purpose flour 1 cup + 1/3 cup
  • whole milk 2/3 cup
  • Water 2 cups + 1/2 cup AND 1/2 Cup (Separated)
  • Granulated sugar 1 cup + 1/2 cup
  • honey 1 tbsp
  • unsweetened cocoa powder 1 cup
  • cornflour 2/3 cup
  • butter, cold and cut into 1 inch cubes 70 grams
  • vanilla extract 1/2 tsp

Instructions

  • To Bake the cake, mix 100 grams salted butter and 3/4 cup granulated sugar with 1/4 tsp of vanilla extract
  • beat the butter and sugar well with the vanilla
  • add in 2 eggs and whisk well
  • add in all the dry ingredients and mix well
  • add 2/3 cup milk and mix well
  • Whisk the batter till smooth and a thick consistency is reached
  • pour the batter into the prepared baking tin
  • bake for 30 minutes at 180 degrees or until the cake is fully done
  • cool the cake once it is baked
  • to make the pudding, mix 2/3 cup cornflour with 1/2 cup water
  • add water (2 cups + 1/2 cup), sugar (1 cup + 1/2 cup) and 1 cup cocoa powder to a heated saucepan
  • whisk the contents of the saucepan until smooth and bring them to a boil
  • add 1 tbsp honey and the cornflour slurry
  • mix until it is thick over medium heat
  • turn off heat and add 70 grams butter
  • keep whisking
  • add 1/2 tsp of vanilla extract and mix well
  • keep the pudding aside to cool
  • once the cake and pudding have both cooled, spread the pudding on the top as well as the side of the cake until the cake is fully covered
  • refrigerate the cake for a few hours and serve chilled

Notes/Tips

To know if the cake has been fully baked, insert a toothpick into the cake. if the toothpick comes out clean, it means the cake has been completely baked. if not, it needs to be baked further for some more time. tasting best when it is served chilled, this cake will also taste great with a scoop of vanilla ice cream and a drizzle of chocolate syrup. This is a recipe I found on @ruchirahoon's instagram feed but i made a few changes to it while going about it.
